As a veg. for 17 yrs I realize its a hard road to start, but well worth the trip. For about $10 to $15 I can cook for 2 people, 3 meals a day plus snacks for one week. (most of the time I have even more leftovers than we can eat.) Careful meal planning is the key. Choose meals from different cultures (for variety) that use the same ingredients, and buy only what is needed for the plan. Make dried beans and rice a staple, as well as barley (makes a great soup or salad). All of these you can buy in bulk for cheap. Make plenty of veg. soup that can be used as leftovers for lunches.If you haven't already, get Mcdougall's books they are full of really good info and recipes. (half.com has used books) Or take them out from the library. Good luck!!!
