I would recommend books such as "Food for Life -- How the New Four Food Groups Can Save Your Life" by Dr. Neal Bernard, M. D. Or there is John McDougall, he has a website you can go browse around on, google his name for the address. There is information out there but you have to go get it. I often find books such as these in thrift stores, I buy them and give them to people who complain about their health or their weight or who are 50 (like my daughter's music teacher) and have already had several heart attacks. In his case I found a Dean Ornish book, Dean Ornish being the cardiologist who has proven heart blockages can be reversed using a low-fat plant based diet.
Your health is the most important thing you have. Without health you have nothing, what else could possibly matter if you're sick all the time and in pain? Eating right gives you energy, keeps you from catching every virus that comes around, keeps your weight stable, and is a joy in it's simplicity. Besides that, if you eat the right foods you can eat as much as you want and not worry about gaining weight or other concerns.
Good luck in your quest, I started changing my diet back in 1993 to a more natural one, reducing and eliminating the simple carbs such as sugar and white flour, cut out most meat, cut out dairy, by 2000 I was vegan and loving it. It's not boring, it's not difficult unless you are the kind of person that minds being different from people around you (I don't), and unless you eat in restaurants all the time because they are clueless when it comes to plant-based and healthy eating; it can be fun, full of variety, and improve your health to boot. But you have to do it, no one can do it for you, and reading about it is the first step. The next step is a trip to a natural foods store!!! What fun!!!
