I've been lacto-ovo since Spring of 1980 and just the last 3 years have been trying to eat vegan. I'm not 100% vegan; once in a while I have eggs and when traveling it is nearly impossible to find a purely vegan dish at restaurants so I loosen up a bit. I probably eat 90+% vegan. There are organic vegan convenience foods at upscale supermarkets and health food stores but they are very expensive. We get them once in a while but eating this way is almost as expensive as eating out. One of my favorite vegan snacks is Clif bars. They are probably not the very healthiest thing you can eat but they are vegan, cheap, and they will hold hunger at bay long enough for you to find something more substantial to eat. I keep an emergency stash of Clif bars in my briefcase and at home. Clif bars do get hard after a while so do eat them once in a while so they don't dry out. There are lots of quick things to make and eat. When I'm in a hurry I just heat some corn tortillas, spoon some black beans and salsa in them and I have a meal; add a ripe avacado and some guiltless gourmet corn chips and I'm in heaven. Vegan whole wheat spaghetti and sauce is really quick. Steamed vegetables over brown rice drizzled with a little soy sauce hits the spot for me. I also make big batches of red beans and rice and freeze it for quick meals. Soups can be good as well but I've been cutting back on these because they tend to be salty and I'm watching my sodium. I haven't been able to find a way to make them tasty without more salt than I should be eating.
