Actually I am working on prefecting my recipe for this, and when I do I'll post in on the recipe board...Basically the amounts are:

1 head of cabbage, shredded and steamed.
1 rubber-banded bunch (usually 3 heads) of broccoli - all the florets and 1/2 of all the stalks and stems, steamed.
4 large potatoes for mashing, boiled.
2 leeks, or 3 bunches of spring onions, simmered in soymilk.

This makes a large amount, so you could just half all the amounts.

I also like to add in 2 fresh, raw diced roma tomatoes, but thats optional and not 'colcannon', but I love the taste! (and color boost).
