I follow McDougall, and mine really varies. I somtimes eat a handful (maybe 1/3 cup) of chickpeas with my morning oatmeal. I often eat hummus and raw veggies and rice cakes for lunch so that's maybe another 1/3 cup of beans. Dinner often has some beans in it, so I'd say another 1/3 cup - unless I eat a huge salad with chickpeas as my whole dinner I probably put a cup of chickpeas on the salad.
I do eat other beans other than chickpeas by the way, but I mention chickpeas just because when I tend to consume more than 1 cup of beans per day it almost always involves chickpeas. (Love 'em.)
By the way, do lentils count as beans?
Anyway, I don't really pay attention to the 1 cup a day rule and I notice that I have tons of energy when I focus on raw or lightly steamed veggies and make sure I have beans as part of the meal. So I guess I kind of lean ETL but I'll never go totally ETL.
