I use 20 ounce cans, brand name "natural value". I think the Dole cans are the same size
though, if you wanted to get those. "Natural Value" is what the carry at "Whole Foods", "Wild
Oats", and many of the Health Food Stores. If you make this just for yourself, then you might want to cut the recipe in half. I'm sure that
the way I've written it it makes at least a quart. The original recipe came from the "Getting
Started" book that came with my vitamix, and I've basically doubled it and tweaked the
amounts a little, doing things like expressing the amount of carrots by weight rather than in
cups, etc. The precise directions, with a vitamix, are that you quickly turn the variable speed
from 1 to 10, and then to high speed, and run for a minute on high.
