It's clear you've been really successful with the plan you've devised - congratulations, Greta!

I'm curious about your salads and how you say you are hungry soon after eating. I can go for 3-4 hours after eating my lunch salads, which, like yours, are huge. I like a lot of genetic diversity in my salads, at least 7-8 different vegetables, beans, sprouts, nuts, and sweet and fatty fruits, in addition to an entire head of leaves. (I eat a smaller salad at dinner but also have other vegetables and beans at dinner.) More than any other meals or foods, salads keep me satiated for longer periods of time. I think it's the high micronutrient content of the leaves, but maybe it's just a truckload of food! :) Are you eating until you are full and using beans on your salads?

You are also on the right track with the 9 servings of vegetables per day. Doing strict E2L will put you in the 15-20 servings/day range, which is even better protection. I'm pretty straight E2L, and meeting the 1 pound/1 pound rule, at least for me, has been fairly easy. I like to push the raw thing as much as I can each day. Raw foods offer enormous protection, and it's a good idea to eat a lot of raw vegetables and fruits.

Like you, Greta, I try to avoid processed grains and use the colored roots and squashes as my starches. I no longer believe that cooking foods at high temperatures for long periods of time (like baked bread and the like) is healthy. Chemical changes occur when foods are at high temperatures for long periods of time, so I stick with steaming and stir fries and used baked foods as occasional treats.
