So far I have only eaten 1 meal and will post the rest as I eat them. I am trying hard to get the last 10 pounds off since my weight has been stubbornly staying 10 pounds above goal for many months, so I decided to try John C.'s approach and try to REALLY concentrate on veggies. Since John C. responsed to me on the McD board that he does not eat "normal" breakfast foods but eats a lot of veggies and potato I decided to temporarily abandon my normal breakfast of oatmeal cooked with fruit and substitute instead:

one potato (about 3 inches diameter) cubed
2 zucchini squash diced
one Tablespoon curry powder
3/4 cup water
Cook in a small rice cooker until done

This takes a long time to cook (30-45min) but it's really delicious. I have been enjoying Morton & Bassett San Francisco Curry powder because it's less spicy hot and seems to taste more of cardomon than other brands making it perfect for B. This combo above cooks while I am out on my morning 90 minute walk so it has cooked and cooled a bit by the time I get home and is immediately ready to eat.
