We were invited to my niece's home for Easter dinner. The main course was to be brisket. I made a vegan "meatloaf" with gravy for my daughter and I, and brought along soy milk and vegan butter for our own little bowl of mashed taters. I also made a vegan pound cake and served it with whipped coconut milk, sweetened with some sugar and vanilla, and fresh strawberries. My niece plated one of two briskets, and her dog ate the other one as we were eating in the dining room! Of course she was very disappointed. I offered my "meatloaf" to anyone who would want to try it. Her husband loved it!!! Others thought it was good as well! As for the dessert, everyone raved about it!!! I was so delighted that my family of meateaters liked my vegan eats! To top it off, my niece's hubby wants the "meatloaf" recipe!! Later my niece posted on Facebook that vegan meatloaf saved her Easter dinner! Yay! My family members just might be coming around afterall :] Blessings ~ Nora
