My DH made a scrumptious lunch on Valentine's Day. First, he picked the remaining vegetables from his garden which, amazingly, survived the winter....kale, leeks and carrots. He sauteed the thinly sliced leeks until they were slightly caramelized. (My digestive juices were working overtime from the aroma!) Then he added a spoonful of tomato paste, some water, basil and red pepper flakes and simmered it until the carrots were fork tender. About five minutes before the spiral pasta was cooked, he added the kale to the sauce. I have to tell you, it was absolutely divine! And, what a treat it was! To top it all off, the evening before, we had been invited to a friend's dinner party and she made a delicious vegan lasagna....hallelujah! I really hit the jackpot this weekend!
