That's smoked liver sausage--one of the things I miss as a vegan. I cooked up some pink beans and put half of them in the food processor, intending to make some sort of hummus-like puree. After the beans were smooth and creamy, the color reminded me so much of braunschweiger that I decided to flavor it that way: garlic, sage, black pepper, a drop or two of liquid smoke. I also beat in nutritional yeast to stiffen it up a bit. It came out really good. The flavor is just about perfectly reminiscent, although the texture is creamier and thinner. Great on toast or crackers, and no fat!
