We began with the McDougall program back in 1996. My DH nearly died twice, in 1992 and again in 1994, so I looked for something that would help him, other than medical.

At the time, we lived in Dearborn Mi. John's parents lived in Dearborn at that time too. John would visit his parents and hold a seminar while he was there. I went to see him and hear what he had to say. I was very impressed. The next time he came to Dearborn, I took my DH kicking and screaming to that seminar. When he saw what happened with someone ate a cheeseburger, fries and a shake, and went vegan that night - so help me he did.

When we started, we had virtually no idea what to have to eat. My DH has celiac, so he can't have wheat, rye, oats or barley. We were lucky to find a person in a near community who held hands-on vegan food classes where we were able to learn how to make these dishes.

This lasted a few months, until we realized we could make whatever we wanted, just using substitutes or leaving stuff out that he can't eat. We love chili, spaghetti, soup, stuffed peppers, and corn-on-the cob done on the barbecue (put the corn on while it's still in it's wraps - turn it a quarter turn every five minutes - remove the outer leaves and hairy stuff, and they are perfectly steamed. We eat the corn without butter or anything, just the corn, and it's wonderful.
