I emailed my sister (who is hosting) and "came out" about being vegan. She said there will be plenty of vegan options and that she will also keep it in mind when planning. Aside from anything else, it made me feel so happy to find her so supportive. I've been vegan for nearly a year, but haven't had any reason to make a point of it until now. Meanwhile, I am going to start experimenting with vegan empanadas, figuring I can make them ahead and freeze them for reheating. And I'll bring the ingredients for one of those yummy corn and bean salads, too. It's going to be fine, and it's going to be fun. :)
