It is so hard when you find the "perfect" job and then can't take it because the pay is not what you need. It's happened to me, too. (And probably to a lot of people.) I'm glad you found a philosophical way to feel better about it. And maybe the shelter wouldn't have been all that great to work at, anyway. I used to work as a volunteer at a shelter: walking and training the dogs to help them get homes. I got particularly attached to one big, sweet guy. One morning I came in to exercise him and he was gone. He had been "sacrificed" to provide a blood transfusion for an emergency surgery at the veterinary clinic. Things like that do tend to happen at shelters, even at "no-kill" ones, I imagine; and that can be hard to take if you are tender-hearted.
