If you like the flavor of umeboshi, but it's too expensive, here's an idea for getting the flavor for a smaller price. I took dried angelino plums (they are tart and red) and soaked them for several days in ume vinegar...until they got soft. I drained the plums and whizzed them up in my mini food processor and ended up with a puree that looks and tastes like real umeboshi. You can keep marinating plums in the vinegar until it is used up. You can also just chop the marinated plums instead of pureeing them.
