Thanks for your reply to my questions. I've been building my collection of vegetarian/vegan cookbooks and books for reading. Although I was eating completely raw (and almost all fruits) for awhile, I have moved away from that a bit, and am more into veggies, grains, beans, and cooked foods at this point. One of the best things that has happened for me is that the cravings I initially had (for "bad stuff" like fried chicken) have gone away. And I'm looking at and thinking about food with a more conscious mind, which makes things that used to tempt me in the past look not-so-yummy these days. What was a struggle a few months ago has become easy and joyful for the most part.

I've been keeping to whole, unprocessed foods, and keeping it all low-fat and low-sugar. No "fake" cheeses or meat-like stuff, and no desserts, even if they are vegan. It's been fun and interesting to make this transition.
