:D The vegan sushi was a big hit! In fact, people zeroed in on it before I even had it unwrapped, and I only ended up taking home enough for today's lunch at work. These were "mini" sushi, so I cut the nori sheets in half and the fillings were more veggie than rice. Here's what I used for the different fillings:
*cucumber and umeboshi paste
*spinach and sesame
*avocado and Thai chili peanut sauce
*soy sauce glazed tempeh and green onion

I think it helped that the rolls were bite-size, so you could pick one up, dab on a bit of wasabi, and pop the whole thing. I love to cook and mess around in the kitchen, so it was really good to see everyone enjoying the sushi.
WHEW!
