I'm finding that eating a plant based diet is really growing on me. Like you, I'm not a fan of fake foods. It doesn't feel authentic, honest, to eat fake meat, and anyway, I don't like any food that is too processed. Eating 80/10/10 for a few months really showed me the pleasure in enjoying foods singly or in simple combinations. If the basic ingredients are fresh and lovely, they don't need a lot of fuss or seasonings.

Books I have at the moment:
The 80/10/10 Diet, by Douglas Graham;
a couple of Christina Pirello's books....and I've been watching her cooking show on the Create channel.

I also bought Mark Bittman's "How to Cook Everything Vegetarian". Not completely vegan (lots of recipes with dairy and egg), but it takes the place of my ratty old copy of "The Joy of Cooking". Bittman's book has lots of info on selecting, storing, and using different fruits and veggies; charts on what herbs go with what; and great kitchen techniques. Plenty of vegan recipes, too, as well as vegan versions of other recipes in the book.

I made some baked tofu this weekend. Brushed a block of extra firm tofu with thinned-down miso, sprinkled it with sesame seeds, and baked it at 350 for about an hour. Yummy! I used it in sandwiches for lunch this week.
