Well I spent the day with my son & daughter in law (K), some of their friends and 3 other children of mine. One friend is a new vegetarian, so in addition to the potatoes, yams, etc, we made some dressing with added apples and baked it in a pan instead of inside the turkey. I introduced her to a few quick tricks of vegan foods we found at Whole Foods.

And I was going to make a coconut pie from Veganomicon (see Delightful Discovery post), but Whole Foods was out of Agar and I wasn't familiar with anywhere else to shop in their town, so made one out of an organic pudding mix with Silk. It was simple food for me, but actually much better than eating far too much and feeling miserable.

Mainly I just gorged on hugging my children, and watching them be together and enjoying being in the same room with them. It was truly a thankful time for me. Because most of them were in the same place with me for less than 12 hours, and some of that was sleep time, because they got in around 5 Thursday afternoon and I had to fly out very early Friday morning.

The funny thing was that K's friend's husband was making the turkey and was very proud of himself - second year he had done it. All the friends showed up Thursday morning while K was at work and my son was asleep as he had worked a night shift. I shared a few tips from my turkey days years ago. I thought it was bizarre -- all these meat eating and hunting types, and I, the vegan, am telling them how to fix a turkey.

And I decorated K's cherry pie with handcut cherries from the extra pie dough. And while I didn't have a vegan feast, I wouldn't trade feasting my eyes on my children for any of your feasts of vegan food. Truly a day to be thankful.
