Wishing all of you a belated Happy Thanksgiving from New Mexico! A winter storm passed
through on Thursday, bringing icy rain and snow, but it's all melted and the sky is sunny
again - although it's VERY cold out. On Thanksgiving, my partner and I enjoyed a cozy vegan
feast for two. We're not fond of Tofurky, so this year we prepared all the sides: a delicious
stuffing made with Gimme Lean faux sausage, garlic mashed potatoes and baked yams,
rosemary mushroom gravy, a variety of vegetables and a fabulous cranberry/cherry pie for
dessert, with So Delicious vanilla "ice cream." Best of all, there were lots of leftovers! Today
I'm making a hearty green chile stew to stave off the chill. Stay warm, everybody!
