Thanks, Summer! The googling is a good idea. And BTW, my son thinks I'm strange too, as do my two daughters, when it comes to food!!! During my very long culinary journey, I have done plenty of research, which resulted in my vegan transformation just over three years ago. It took quite a few changes over the years, but I'm so glad I eventually got here. I wouldn't change back for anything. I do know the dangers (IMHO + aforementioned research) of the Atkins diet, which is why I am concerned, but it will take more than just my concerns to influence my son, (why is it anyone but Mum can convince kids of anything?) therefore this searching. Hope your studying is going OK.
