Last night we had dinner guests, one couple and one single man. None of them are vegan or even vegetarian, but very open to trying new food. I prepared "Baked Stuffed Shells" from Ultimate Uncheese (only I stuffed manicotti instead of jumbo shells), and my husband grilled fresh asparagus spears on the BBQ. This was rounded out with a loaf of warm sour dough bread. For dessert I made the "Lemon Teasecake", also from UU, topped with cherry pie filling. Everything was so delicious, and everyone was so impressed with the food, and not just because it was vegan, but because it was so good! However, I have to say, the Teasecake always does seem to take people by surprise, and one of our guests had to ask, "Are you sure there is no cream cheese in this?". Jo, you were our absentee guest of honor last night, but I gave you all the credit! :) Becky
