Welcome aboard! And I have to say there's possibly hope for your husband. My older brother was a confirmed carnivore, but in my 13 years of vegan (and 5 earlier of vegetarian) I have slowly educated him. He now eats a lot of soy and faux meat, even though he still has chicken once or twice a week, and occasionally tuna. He's made great strides with a little subtle coaxing. So keep at your hubby--he may well surprise you!
