It's so great that you've discovered this way of eating so young!
You could keep nuts, seeds and dried fruit in your room for a late night snack. Sunbutter brand sunflower seed butter can be a pretty good alternative to peanut butter and even fit in the nuts and seeds portion of daily food. And it has all kinds of good minerals in it.
Also "save" your daily bread and and nut butter servings for late night instead of having any during the day, so that when you do have it, your diet still fits the plan and you're not even cheating.
Can you bring a banana back to your room from the cafeteria or snack shop? If so, that goes well sliced on top of bread and nut butter. Or an apple dipped in a little nut butter is really tasty, or say an apple and a handful of nuts, or a banana with nut butter and no bread, etc.
I don't think I'd worry a whole lot about eating late at night if you're hungry. When you eat this healthy, then eating when you're hungry should not be a problem.
