I said the same thing but I have really not had a problem surprisingly! I just eat half for lunch and half for dinner. I have had fun mixing all kinds of things into my lettuce to make more interesting salads. I put raw veggies (broccoli, carrots, tomato) fruit (pears, apples, strawberries, grapes) and beans (black beans, red beans, chick peas) in different mixtures and it really makes it much easier to get all the greens down. There are several commercial dressings that are recommended in the book that I didnt have a hard time finding in the regular grocery store and the zesty tomato dressing in the ETL book is really very good (even for a non-tofu person like me!) I also found that Walden Farms brand makes a sugar free/fat free/calorie free dressing that is actually not taste free! You have to watch the sodium in some of them but I found that most of the flavors had less sodium then the dressings that Dr Fuhrman suggests so they should be good options especially since they have no dairy or sugar. And remember that he says to eat a lb of greens so you can have a spinach salad instead of lettuce or other kinds of leafy greens. I had a fantastic spinach and strawberry salad with one of the fruit vinaigrettes in the book and it was SO good.
