Good for you for starting the ETL plan-I hope it is going well so far!!
I find it is very important to have a good blender. I don't have a vita-mix (too pricy for me, but I would love one) but I do have an Oster BPST02-B Professional Series Blender(you can find it on amazon for about $70) and it is wonderful!
As for a juicer, I think they are wonderful, I don't have one yet (I'm a cheap student!) but my mom has one and I often use it. Her's is a Champion brand and we have found it to be the best we have ever used (it is easy to clean and this is SO IMPORTANT in a juicer).
The greatest thing you will ever discover for your health and your family's health is green shakes. Use your blender daily for these, they are tasty (even to picky kids) and get all the good stuff into them!
For breakfast I like to eat about 3 different fruits with a Tbsp of almond butter and a sprinkle of ground flax seed. Other great ETL breakfasts include a green shake or oatmeal (but remember to limit grains to 1 serving a day).
Kitchen essentials: great blender, juicer, lots of fridge and freezer space, good tupperware to keep everything fresh and ready, a food processor is nice too.
Your veggies should not be freezing in your fridge, that means the temp is too high. Try turning it down a few notches (i'm not sure exactly what temp is ideal)
As far as milk, remember you should be teaching your children to be eating their calories, not drinking them, so try to wean them off of it soon. I would recommend a soy milk in the meantime but try to find one that is only soy and water (many soy milks have lots of sugar, salt, etc). Goats milk is not a good option at all as it contains animal protein and saturated fat.
It is great you are raising your own meat and eggs but remember these play a VERY SMALL PART in the ETL program-these are NOT health foods and must be consumed RARELY.
Cheese is a tough one, I would get it out of the house and eventually everyone will stop missing it.
It is wonderful you have a garden, get your kids involved in growing and they are more likely to eat and enjoy their fruits and veggies.
