I like your perspective. What is appealing and not appealing is a function of learned response more than anything else. When one begins to eat simply, unprocessed, what used to be hugely appealing becomes less so (fatty, sugar, processed foods). I also agree about the vegetable-fruit smell thing. When I was little, in the 60's, I remember peaches having a distinct SMELL. Delicious. And peas and carrots, etc. from my great-aunt's garden were divine. Not so much anymore. Produce seems, for the most part, lacking in smell and flavor because of the way it is grown, shipped, etc.

Although I will say that if you quit bombarding your taste buds with heavy salt and sugar and chemicals, these simple plant foods start to TASTE and SMELL and even plain veggies and grains taste sweet.

I think by simplifying your diet and then paying close attention to how you FEEL after eating certain things, not just how things taste, you can determine what foods might be beneficial. When I eat whole, unprocessed grains like whole kasha, millet, I feel wonderful -- satisfied, nourished. Same for greens like kale, other vegetables -- and sea veggies, yum. My new favorite thing is seaweed candy made from barley malt and kombu. And yet some say not to eat grains, etc. I just don't understand that, cultures have thrived for centuries on UNPROCESSED grains. I just know that what makes me feel scattered and unhealthy are the foods that are also most appealing to most humans (not me anymore) -- fatty animal foods (which I stopped eating years ago) especially things like cheese -- sweets with lots of sugar, processed chips and other foods, chemicalized foods that are so popular.

What is appealing on the outside, then, is not necessarily what makes you feel most nourished on the inside. I think what is appealing is most a function of what you learn, and what you become used to, and what becomes a habit, and that can be anything, including insects in some cultures. Yuk!
