High-quality vinegars and fresh citrus juices are great seasonings to use in place of salt. Garlic is wonderful, as are fresh herbs. Dried herbs are good but nowhere near as flavorful as fresh herbs. Anything in the onion family (leeks, shallots, onions of all kinds, scallions) add a delicious boost of flavor. Salt-free seasoning blends, such as curry powder and chili powder, are excellent. I also like Dr. Fuhrman's VegiZest in small quantities, and I particularly like salt-free Spike seasoning, which is available at most natural food stores.
