I've been following ETL since August 2007. What a difference it's made! The best thing I've done for myself in decades. I've lost 25 pounds and am at the weight I want to be, my skin has cleared up and gained a lot of color (like a sun tan, almost), I've dropped almost all medications, feel like brain fog has mostly gone away.
I follow the strict 6-week plan pretty much 100% except for occasional weekend dining out and occasional glass of wine. Here's my daily menu:
Breakfast: Oatmeal with blueberries, walnuts, apple, 1 T flaxseed.
Lunch: Huge salad of spinach, kale, collard or chard, carrot, mushrooms, cherry tomatoes, red pepper, cucumber, sunflower seeds, pumpkin seeds, cut-up orange, various other veggies as they occur to me. Dressing is usually a blend of grapefruit/orange/cashews/vinegar.
Also for lunch: bowl of some kind of bean/veggie soup. Lately it's been lentil soup. Chili is also a favorite.
Dinner: Green smoothie (1-2 pieces of fruit, frozen berries, kale, spinach (or bok choy, etc.), water, 1/3 cup of pomegranate juice.
And/or: lots of steamed veggies, including kale and spinach. Usually squeeze a lemon over everything.
I keep all the nuts and seeds to around 1 oz daily.
