Here's one that I got from one of members of the ETL forum. I use it almost every day: 1 grapefruit, peeled, cut up in 8ths 1 orange, peeled, cut up in 8ths 1/2 cup cashews 2 tablespoons spicy pecan vinegar (Cuisine Perel makes the one I use) Mix in blender (I use VitaMix). Makes enough to last for 4-5 days in the fridge. The original recipe called for less cashews and vinegar than I use, so you can adjust to your taste. My huge daily salad is usually spinach, collard, kale with a variety of veggies and a cut-up orange. Four tablespoons or so of this dressing is perfect for this kind of salad.
