I read Eat to Live a few years back and though I didn't follow his plan I did recommend highly to many people that they should read this book.
I've recently taken another look at it and when viewing the nutrient density line on page 120 I've noticed that he rates green peppers a 97 out of a 100 while red and yellow peppers only rate 50 points! I know Fuhrman is all about getting in green veggies but I have a hard time believing that green peppers are nutritionally superior to red or yellow ones. What do you think? Anyone agree?
And then when he pushes for getting in 1 lb. of raw vegetables a day in the form of salad, I'm not clear on whether he wants us to eat 1 lb. of lettuce (greens) and whatever other veggies we put in that salad like cucumbers, peppers and tomatoes is above and beyond the one pound or does the one pound include the tomatoes and peppers etc.... thanks for any clarity you can offer me.
