I didn't quite spell this out, but the basic rationale for replacing grains with vegetables as the basis of the diet is as Dr. Fuhrman has put it "to achieve the potent anti-cancer and anti-heart disease benefits". I was going on and on about the anti-oxidants which come from the colorful fruits and vegetables, and not from the grains, and of course it is these anti-oxidants that are powerful in protecting us from cancer. The cruciferous vegetables in particular, seem to have a particularly powerful anti-cancer effect according to recent studies.
