The problem with most vegan diet is that it is low caloric foods and to get enough calories from a vegan diet you must eat lots of fruits rich in calories and work out. Pump muscles with fruit eating will ensure that you won't loose but gain muscle. But I wonder if you gave up industrial foods and salt, then the muscles will become more lean, but not weaker, simply they will loose a lot of water that they contained to protect themselves from the salts.
