Especially loved your insurance story. Too bad you have to continue to cook SAD for the kids & hubby, though. (Can't he, at least, help with the cooking?) I know what you mean about the time-consuming nature of salads. To me, all the time spent in food prep is the main drawback to the Fuhrman plan -- that, and how water-intensive it is to wash all those greens & veggies. (I live in a drought area.)
