Fuhrman recommends blended salads with nuts, seeds, veggies, fruit, at times avocado and tofu if you like. Blending them is good for hydration, less time eating, nutrient bio-availability, and makes easier to get more calories (which is another reason for the nuts/seeds). I know the mainstream E2L plan calls for few nuts/seeds, because of oil content, but athletes definitely need the calories and nuts/seends have tons of good nutrition too! I make fruit/veggie smoothies all the time and they can be really delicious. Here's an example: 1 banana 1 half block tofu 2 TBSP ground flaxseed 1 apple 1/2 bunch kale pumpkin seeds and of course you can switch around those ingredients to make it denser or lighter.
