I just started the eat to live program last week, and I love it so far, I already have a lot more energy. I've been vegan for a couple years now, but it is still very easy to be an unhealthy vegan with all of the premade products available now. One of my favorite dishes as a vegan was to make Seitan (fake meat) by using Instant Vital Wheat Gluten. The recipe I followed was in a book called La Dolce Vegan, and it was great! Does anyone know if this is off limits? I can't really tell. It is essentially pure protein and very little fat from how I understand it. I am guessing it should be consumed in very low quantities if any, but I just wanted to check. Thank You!
