One more thing. I am the only ETL member of our family, so I keep my dinners very simple. I cook a large pot of beans 1-2 times a week and scoop a cup out each day. For dinner, I will eat a soy burger (the only low sodium ones that I have been able to locate) and cook a bag of green vegies (I am on a broccoli or green bean kick right now). Or, I will go for the huge spinach salad with soy beans and raisins with all kinds of vegies. Some of the recipes on here sound great, however, since it is just for me - I just keep to the basics.
