7 am - Breakfast: Large plate of steamed broccoli and green string beans (about 1 lb) with juice squeezed from 1/2 lemon. Plus a few drops of liquid DHA, 2 Gentle care vitamins and 1 1000mg B-12 tablet.10am - Brunch: Bowl of fruit - 1 orange, 1/2 apple, 1/2 pear, 1/2 cup melon, 1/2 cup fresh pineapple, 1/2 banana, 1/2 cup frozen blueberries. With a small handful of mixed raw nuts and 1 tbsp ground flaxseed and 1 tbsp nutritional yeast. All mixed together with juice from 1/4 lemon and 1/4 cup pomegranate juice. Yum! 12pm - Lunch: LARGE salad - one large handful romaine, one large handful spinach, 1/4 cucumber, 1 tomato, 4 stalks celery, 1 carrot, 1/4 purple onion, 1/4 red pepper, 2 large mushrooms, 1/2 cup pineapple, 2 dates and another small handful of mixed raw nuts. Dressing: equal parts lemon juice, pomegranate juice and balsamic vinegar. (This is more than a half gallon of food but I finish it every time!) 3pm - dinner: One cup cooked beans with 2 large mushrooms and 1 tbsp A-1 steak sauce (you heard me right... A-1 steak sauce is vegan! Although it is very high in sodium, i allow myself this one indulgence.)
I cook the beans up fresh in my pressure cooker using no salt and no oil. I usually cook up more than one type of bean at a time and make large batches - enough for a week. And I don't even bother to soak them first. One week it will be beige soybeans and garbanzos. Then next it will be pinto, black and red kidney or lentils and black-eyed peas. After the beans have cooked, I usually throw in a bag of frozen veggies and let them cook for just a bit (peas, green beans, corn, etc.) Sometimes, when I don't have cooked beans handy, I'll just have another bowl of fruit for dinner just like the brunch meal. I LOVE fruit - fruit is the best food of all IMHO.Note: I do real well when I stick to this plan, but I do frequently fall completely off the wagon and binge on a fleet of toasted peanut butter sandwiches with agave nectar, or a bowl of grapenuts with vanilla soy milk, or the occasional batch of my magic brownies, or ... rr :-)
