The E2L plan is not just about weight loss (though it's great for that) but it's about nutritional excellence and maximixing the micronutrients/phytochemicals you get from food. In his book, Dr. F explains that AT LEAST one cup of beans per day is necessary because they contain valuable phytochemicals and other cancer/heart diesase preventative micronutriens you can't find in veggies and fruits. So, eating beans is essential to the E2L plan, to nutritional excellence, and to adopting a plant-based diet long-term.
I usually put a cup of beans on my lunch salad, and with all the other veggies on the salad you can't really taste them. In other words, you don't have to eat beans straight from the can! You could also try some of the creative bean recipes to get your allotment in. I've seen great ones for bean chili, veggie patties, etc. Good luck.
