Subject:         soup recipe question

In several of Dr. F's soup recipes, it calls for carrot, celery, or beet juice. Does anyone know if it would make any difference if the whole vegetable was used instead? If you are going to puree the soup anyway, why not get the value of the whole rather than just the juice?
