Others will reply to this too I'm sure. Dr. Furham is big on beans because they have phytochemicals/antioxidants that are very powerful. Some of these are absent in fruit and veggies; you won't get them NOT eating beans. Beans are also an excellent source of protein, which you could be lacking depending on the fruits and veggies you chose.

Dr. F encourages people to eat at least a cup on his program. I'd encourage you to find a way to eat the daily minimum, because, as he says, his plan is all about the micronutrients in food. You'd be diminishing some of the nutritional excellence of the plan without beans.

Pull a few good recipes for vegan BBQ beans or vegetarian chili beans made with kidney beans from this site or cookbooks and find a few you like. In other words, find a way the beans are made that will make them tasty to you. Good luck.
