Sometimes you may have to eyeball it. One suggested way to get a good idea of a pound is to at first get prewashed packets of the Dole or Organic Express salad mixes (spinach or classic romaine or Italian). Those come in 8 oz and 10 oz sizes usually. A pound is 16 oz. So, two of the 8 ounce bags, or a bit less than two of the 10 ounce bags, is 16 ounces or a pound. To measure other raw veggies, supermarkets such as Kroger and Wild Oats charge you by the pound for their salad bar. Get a container of the assorted raw veggies you like; their weight and price will be on your checkout ticket. After eyeballing this a few times, you will know about how much raw veggies makes a pound. Or, one packet of broccoli slaw or cabbage or mixed veggies in the produce section is usually 16 ounces. That's a pound. Once you see this a few times, your set without having to do precise measuring. Good luck! P.S. My co-workers comment on the large salads i eat at lunch--one pound is a lot!!
