It sounds to me as if the greens taste overly bitter to you. There have been studies that show that for some people those healthy greens taste more bitter than they actually are. The remedy? Salt. In lieu of salt, try lemon juice, preferably freshly squeezed. Garlic helps, too. Garlic and lemon juice allow me to eat more greens than I would without them! Freshly sqeezed grapefruit juice is a pretty good salad dressing, too. Put the grapefruit on the salad and use the juice as a dressing.

Another thing to use is vinegar. There's a wide variety of tasty vinegars available, way beyond cider, distilled white, red wine, white wine and balsamic (not to say that those aren't good, too). I'm currently partial to the Late Harvest Riesling vinegar made by Cuisine Perel. Pricey, but oh so good!

I'm not sure what it is about salty and sour, but they do help the bitter greens go down better.
