Hi and sorry you are so frustrated. How about an attitude adjustment first? If you are going to follow this Eat to Live program, raw foods/salads are a big part of it. Do you want the long-term gains of being (hopefully) disease free, at a great weight, cancer free, maximized longevity, etc., or do you want the short term pleasure of your comfort foods like mac and cheese, which harm your body over the long haul? The choice is yours. I think this is the real issue: you have not truly committed to the long term gain of this type of program. Most Americans chose this path--they want the short-term pleasure of their favorite foods like cheetos, onion blossoms and beer, regardless of what it does to their body long-term. If you ever come to the point where you decide you want the long term gains (minimizing diseases, doctors, meds, your chances of being in a nursing home, etc.), then a few things may make salads and raw foods more interesting. 1) You could try a mix of raw veggies in lieu of salad: how about some cucumber, onion and tomato salads? Broccoli, beans, and onions? Spinach and onions? Peas and grilled tofu chunks? 2) You could try to put something like salsa on your salad instead of salad dressing or experiment with flavored oils like garlic infused oil. 3) For the beans, how about putting them in a whole wheat wrap with onions and corn and salsa for a burrito lunch? 4) How about making a veggie soup chock full of veggies and beans and eating it instead of the salads? These are just some suggestions. None of it will truly be the answer though unless your mental state shifts to wanting long-term health benefits in lieu of unhealthy comfort foods. Also know that an occasional deviation is okay on this plan after the first six weeks. If you absolutely can't live without pizza once a month have it! If you can't survive without mac and cheese, have it once every two weeks or once a month. Then go back to the plan for the rest of the meals. Lastly, also know that over time, your taste buds WILL change and one day the thought of mac and cheese will just not have the pull it does now and you will learn to love veggies and fruits. Well, maybe, anyway. Good luck!
