He mentions that some phytochemicals/antioxidents are released more effectively when cooked (such as lycopene). He also doesn't fully buy the premise of the temperature limit destroying beneficial nutrients based on studies he's reviewed. Also, he's big believer in beans and legumes(which need to be cooked to be edible and release their antioxidants)as nutritional powerhouses.
That said, a large portion of his program is raw--1 lb of raw veggies, 4 fruits+, 2 ounces avocado, and 1 ounce of raw nuts are all key to his program DAILY. To that he adds 1 lb of cooked greens or green veggies, 1 cup or more of cooked beans, and 1 whole grain/starch if desired (more if weight loss isn't an issue) DAILY.
