I hope you will keep trying with the E2L thing; it is so worth it!
My husband ended up joining me in this way of eating.
What he figured out as an approach for anyone having difficulty is that
it really helps to come at this by investigating new foods and recipes that you like, rather than from a perspective of giving things up.
Keep searching, experimenting, to find the healthy things you like. I'll bet they're out there!
We eat tons more green veggies now, but recipes that helped us a lot (this was actually before we found E2L)were vegetarian chili, whole wheat pasta with marinara sauce, things like that. The chili we still use. I'm off wheat now, so we don't have the pasta, although we're about to try some soy pasta we got at Whole Foods when visiting Sarasota, Fl.
