I wouldn't worry so much about the amount. As long as you're eating mostly raw and cooked vegetables and you're not hungry, I think you're getting enough. Dr. Fuhrman has said that the amounts (1 lb.) are just estimates, something to shoot for. Everyone is different, and some people can't eat that much.

If you want to make bean dips instead of salad sometimes, go for it. It's really your choice. As for how much nuts to eat to maintain your weight, I think that's something you'll have to experiment with. If you find you're losing weight, add some more.

It's really not a hard-and-fast-rules kind of plan. Just incorporate the general principals into your life (eat fruits and veggies) and don't obsess about it. Once you get the hang of it, it'll become second nature to you...and you'll prepare those salads in no time!
