I just started incorporating Dr Fuhrman's plan about a week ago. I don't have any weight to lose so I guess I am already starting on the life plan. It has been hard to get both 1lb of salad and 1lb of green veggies in. I only weigh 100 lbs and it seems like by the time I eat all the salad, there is not enough time to eat all the green veggies as well. I think what Dr F. says is right and true, but is seems like I have to be preoccupied with food to make sure I get enough. I have been making my salads with carrot, red bell pepper, jicama, zucchini, cucumber, celery, sometimes beets, broccoli, and cauliflowerand beans and sunflower or slivered almonds. It seems like it takes a long time to make each day. I am getting faster though. Instead of putting so many things in the salad should I make bean spread or dips and eat them with celery or broccoli and cauliflower? How many nuts should I eat to maintain my weight since this is a nutrient packed low calorie food? I know it depends on how much activity and workout that I do, but is there a general amount?

I know mentally I feel good knowing I am eating all of those wonderful phytochemicals, but I don't want it to feel like a chore, or like I am always falling short.
