Well, you just described Eat to Live in a nutshell (no pun intended).

I take it you've read the book. If you have read it, you noticed that there is a section on what to eat every day, including minimums, maximums, and all that. There's also a section, or a small paragraph, called "Keep it simple," or something like that. If you follow that, you'll be doing a strict Eat to Live plan that will work for you. It goes like this:

Breakfast - fruit
Lunch - salad with beans on top; fruit dessert
Dinner - more salad; large serving steamed veggies; more fruit

You can add a starchy veg in there (and even those can be microwaved), throw some nuts on your salad, and you're good to go. Really, it's the easiest plan in the world if you don't cook. Buy bagged salad greens and bagged cut-up veggies. Use canned beans. It takes 5 minutes to steam a veggie in a microwave. Fruit is raw, and nuts are raw. How much easier can it get? You'd have to have a personal chef for it to be easier, and even then, it's faster for you to just grab something out of the fridge and toss it in the microwave, rather than waiting for someone else to do it for you.
