I would assume that nuts are roasted in some kind of oil. Many of the oils used in roasting nuts are hydrogenated, which would be bad news.

Fuhrman says roasting alters the beneficial fats in the nuts. Could be a chemical process from the high heat at long durations, although this is not clearly explained in the book.

Cashews are fine. You can eat raw cashews as part or all of your 1/4 cup of nuts per day.

You can buy all kinds of raw nuts and seeds online. Just Google what you want, and you'll probably get plenty of hits.
